I actually consider this the most difficult meal to make. It is so easy to just eat cereal or toast. It is especially challenging for me now that I am not eating meat, eggs or dairy. With the help of my beloved cookbooks and posts from others who are trying to eat healthy I am started to find easy, healthy breakfast choices. Although, I do love my toast with tomatoes and avocado and need to branch out.Here are a few recipes I have tried so far. Again, thanks to the chefs that have created them and thanks for making breakfast a little more interesting.
